Egusi Seed

Egusi Seeds?
Egusi seeds come from the Egusi gourd, which looks very similar to a watermelon. Unlike a watermelon, however, the fruit from the Egusi gourd is bitter and not edible, so these gourds are grown primarily for their seeds. These seeds are similar in size to small pumpkin seeds and a bit creamier in flavor. 

They make up a really important component of many West African staples, including Egusi soup, which is a West African classic. It’s widely enjoyed in countries like Nigeria, Ghana, Sierra Leone, and Cameroon. Even though many of these countries and regions have their own little variations for how they prepare Egusi soup, the importance of the Egusi seeds remains the same.

Why Do We Love Egusi Seeds?
Like a lot of other nuts and seeds, Egusi seeds are very high in oil. They’re 50% oil, 78% of which is unsaturated fatty acids, which are the healthier type of fat! The oil produced from these seeds is rich and flavorful. They’re also 35% protein. 

Egusi seeds are rich in vitamin A, which is crucial for forming and maintaining healthy bones. In addition, Egusi seeds are high in vitamins B1 and B2, which are both important for growth and the production of red blood cells. There’s a high concentration of vitamin C, too, which helps the body absorb iron and maintain healthy tissue. Finally, Egusi seeds are also high in Niacin, which helps maintain healthy skin.

Food Nutrients

 When we looked as the following we observed the differences in the groups with antigen and without antigen and this can be regarded negative or positive. It is obvious they are different from each other, regardless they are blood but they are different. When we looked into this one can understand they are not the same thing. They differ from each other in their composition. Now it is clear that what will build this blood cell will not be the same thing but has to be different.

However, let us check with animals to know what the blood group will be like. For example Lions eat meat and they cannot eat grass so also goat can eat grass but cannot eat grass. Different animals had different food. They the food they can eat and the ones they cannot eat, this is based on their blood groups. Different animals with different blood groups required different types of food service. Likewise we human supposed to know the food & drink that can build our blood cells. This will determine the type of food we have to eat. And if the wrong food is given to the wrong blood cell, it might damage the blood cells instead of building it. Most often we eat ourselves to death and not to live. When we are eating determines our health and life altogether.

However, observing the food nutrients table, we can see the fruit and vegetables contained many vitamins of different kinds. They are not same in their compositions. Here we can classify the human food as in five categories. They are:

1. Vegetables

2. Fruits

3. Meat

4. Stems and tubers

5. Beverages

These categories had different nutrients Vegetables (Vitamins and Minerals), Fruits (Vitamins and Minerals), Meat (Proteins) and Stems and tubers (carbohydrates) Beverages that contain some basic nutrients such as amino acids, lipids, vitamins, carbohydrates, and minerals.

The vegetables had different group of vitamins of different types such as vitamins A, B1, B6, and C. etc
These had different composition and they are given to a specific blood group to build the cells but when it was not observed then can be problem sometimes to the blood group. In some cases the food service companies may process these foods to another into another thing that can harm the blood cells. Good food and beverage management helps a lot to determine the food service which we can adopt to maintain a good health.

How to Make Nigerian Beans Porridge

 Yam porridge is made from the plant called yam which is mostly common in Africa. This is a tuber plant that grows within the tropical regions. 


This can be purchase from different countries that produces it. The plant is a climbing stem that grows with the support of other stem. But it is not parasitic plant it only needed support to grow and takes about three(3) to four(4) months to mature.

This is my way of jazzing up the boring ol’ beans. It’s so yummy, even the fussiest eaters will love it. 

Ingredients

  • 3 cups honey beans
  • 1/2 cup palm oil
  • 2 tbsp ground crayfish
  • 1 large onion, chopped
  • 6-8 tomatoes, chopped
  • Scotch bonnet chilies (to taste), chopped
  • 1 cup sliced ugu leaves
  • Seasoning cubes
  • Salt

Steps

  1. Pour the beans into a tray and pick out any dirt and stones from the seeds.
  2. Rinse the beans thoroughly with clean water and transfer to a deep cooking pot.
  3. Add enough water to cover the beans; boil for 10-15mins, then drain and rinse the beans again.
  4. Put the beans back into the pot, add enough water to completely cover the beans, and cook on medium heat till the bean seeds are soft. You can test for softness by pressing one of the seeds between your fingers: if it mashes easily, it is cooked.
  5. Pour the palm oil into a dry pan and place over medium heat, add the chopped onion and fry till translucent.
  6. Add the chopped tomatoes and pepper and fry for about 3-5 mins or until the moisture content is reduced.
  7. Next, add the cooked beans, seasoning cubes, salt, and crayfish; mix and add your ugu leaves. Turn off the heat after a further 3 minutes.
